Robin, our senior prep chef, is of Puerto Rican stock, and this is her recipe. An epic Puerto Rican party dish, this long-roasted, super-flavorful pork roast, called Pernil, just melts in your mouth. Cooked with lots of garlic, liberal amounts of adobo seasoning (which we make in-house), fresh-squeezed orange and lime juices and good stock, the pork is too tender to slice properly so we whack it into chunks.
