Trout is one of my favorite fish and it pairs so well with fresh local produce. Fresh cherry tomatoes from Patchwork Gardens and Peach Mountain Organics are mixed with a rich preserved lemon vinaigrette and herbs from our own herb garden and placed on the freshly grilled trout along with tapenade mayonnaise for a touch of richness. Perfect summer eating, served with buttermilk mashed potatoes and fresh local vegetables.
