Alabama BBQ Chicken Sandwich with Collard Greens 12.95
Alabama is famous for what they call white bbq sauce, a mayonnaise-based sauce with a touch of garlic and horseradish that is made for chicken, and is utterly delicious. A grilled chicken breast is dipped into a vat of the sauce, then laid on a fresh length of baguette that has been buttered, toasted and piled with juicy, long-braised collard greens. A little more drizzle of the Alabama white bbq sauce, clamp the toasty top down, and you have some good eating. A sandwich to usher warm weather in with, served with French fries or vinaigrette-dressed greens.

To order, we throw about a quarter pound of the meat on the griddle with sharp cheddar and let it steam under a lid.
